Ingredients

1 pound boneless skinless chicken breast

2 tsp garlic powder, divided

1/2 tsp onion powder

3/4 tsp paprika, divided

1/4 tsp cayenne pepper

1 tsp table salt

1/4 tsp black pepper

2 Tbsp olive oil

3/4 cup plain breadcrumbs

1/2 lemon

1 Tbsp butter, melted salted

1/2 cup parsley or cilantro

Directions

Cut the chicken into bite-size chunks and add to a large bowl. Season with the onion powder, salt, pepper, 1 tsp garlic powder, 1/2 tsp paprika, and the cayenne, if using.

To the chicken, add the oil and breadcrumbs. Toss the chicken to coat, pressing so the crumbs adhere. Add to an air fryer basket in a single layer (or cook in batches, if necessary) and air fry at 400°F for 10 minutes, or until cooked through. Alternatively, bake at 400°F for 15 minutes.

Meanwhile, into a small bowl, grate the zest from the lemon half and squeeze the juice. Stir in the butter, 1 tsp garlic powder, remaining 1/4 tsp paprika, and the parsley. Serve the chicken bites with the lemon sauce.
